Uses: Eggs, omelets, and many southwestern dishes include chicken or pork tamales, encheladas, and is especially good in a homemade chicken salad in lieu of pickle relish.
Overview: Fire roasted Jalapeno is the #1 ingredient by weight. We use pickled tomatillo to accentuate the tartness, and the garlic presence here is by way of toasted (not roasted) garlic. We have not found another garlic, in any form, that delivers this intense, distinctive flavor and aroma. Everything is rounded out with lime juice, Serrano and green Habanero peppers, Sweet onion, a dash of Cilantro and we even added some Epazote leaf to help bring some authentic Mexicana into play.
Notes: I say, "Freak Show borders on being a labor of love," because of the cost of the ingredients. This is one of our lowest profit margin products, but we cannot bring ourselves to part with it. This sauce started off as a commissioned product by the stunt director of a wildly popular TV series as a personal gift to all of the case and crew (in fact, he gave 2 bottles away to all of them at the after party on the last night of filming). The reaction was so solid that we did a little test marketing and wound up keeping this as a full time sauce in our main line-up.
Keeps and tastes best if refrigerated after opening. We do not use any artificial preservatives and rely solely on pasteurization and pH to create shelf stability.
