Highlights: Our very first official co-branded collaboration hot sauce with Flying Dog Brewery, made with their infamous Mango Habanero IPA: Fever Dream.  This is a LIMITED EDITION sauce! With this beer pretty much being part of the "Brewhouse Rarities" series, this has become a very hard to find sauce! If you're a fan, get it while the getting's good because there's NO TELLIN' when it'll be back, sad to say.

Uses: Fever Dream goes exceptionally well on many light protein dishes. With an IPA being the #1 ingredient, the hops offset what would otherwise come off as a sweet sauce. Fantastic on seafood, pork, and makes a solid marinade.

 

Ingredient overview: Like most of our craft beer collaboration sauces, the beer takes the stage; in this case an exquisite Mango-Habanero IPA. Pureed and cooked carrots gives the sauce body, and the addition of more mango pulp and peaches rounds out the fruit and sweet notes. The pepper blend is primarily a combination of orange Habanero and Fatalii chiles, which gives it a nice balance of flavor and complex heat.  

 

Notes: With this being our first collaboration, both parties used the opportunity to get to know each other. On the Voodoo Chile side, we didn't get too aggressive with the propsed product, and on Flying Dog's side, Matt Brophy and Ben Clark observed more what we were presenting with each test batch, and asked questions more than pushed new ideas. The final product is something all parties were proud of and production size pilot batch of 160 cases sold out in barely over a week.

 

Sadly, the beer, Fever Dream, has been moved to "Brewhouse Rarity" status, so this sauce is no longer a yeah round offering. We DO, however, have plenty of third and final batch brewed in 2017.
